Flying into Amsterdam for 3 days, then have 9 days to go elsewhere. Should we experience only Netherlands or explore elsewhere (we’ve been to Paris and London)?

Any hotbeds for restaurants or local shops? We enjoy smaller cities and towns and we are driven by good food/restaurants and strolling local shops, markets, parks, architecture/houses.

If we just stayed in Netherlands, after Amsterdam, we’re considering Rotterdam, Utrecht, Leiden, Delft and Giethoorn.

If we go outside Netherlands, here are some cities that caught our eye:

* Dijon
* Strasbourg
* Lyon
* Bordeaux (if we only did this)
* Colmar (+Eguisheim)

Denmark

* Copehagen
* Ribe

* Erfurt
* Freiburg
* Wurzburg
* Bacharach
* Monschau
* Bravaria (maybe too far south for this trip)
